  1. Mix potatoes, 1 cup cheese, broccoli, eggs, onion, and seasonings. Melt butter in 10-inch non-stick skillet over medium heat. For each pancake, fry 2 tablespoons potato mixture until crisp and golden brown on bother sides. Top pancakes with remaining chees; broil 1 to 2 minutes or until cheese melts.

Make ahead:

Prepare as directed, except for topping with remaining cheese and broiling.  Cover; refrigerate overnight.  When ready to serve, broil 6 to 8 inches from heat 1 to 2 minutes on each side or until crisp.  Top with remaining cheese and continue broiling 1 to 2 minutes or until cheese melts.
