Instructions
- Sanitize Everything - Wash your hands, cutting board, knife, and mixing bowl thoroughly. Rinse your glass jar with boiling water and let it air dry completely. Cleanliness ensures beneficial bacteria thrive while preventing bad mold.
- Prep and Shred the Cabbage - Remove the tough or dirty outer leaves from the cabbage head. Save one large, clean outer leaf for later to use as a topper. Cut the cabbage into quarters, slice out the hard inner core, and finely shred the remaining leaves by hand with a knife, a mandoline, or a food processor.
- Weigh and Calculate Salt - For the perfect ferment, aim for a 2% salt ratio by weight. Place your empty large bowl on a kitchen scale, tare it, add the shredded cabbage, and note the weight in grams. Multiply that weight by 0.02 to determine the exact amount of salt needed (e.g., 1,000g of cabbage requires 20g of salt).
- Massage and Rest - Sprinkle the calculated salt over the shredded cabbage in your bowl. Using clean hands, aggressively massage and squeeze the cabbage for 5 to 10 minutes. The salt will draw out water, making the cabbage limp and creating a pooling pool of natural brine at the bottom of the bowl. Let the mixture sit undisturbed for 30 to 60 minutes to draw out even more liquid.
- Pack the Jar Tight - Transfer handfuls of the cabbage into your clean glass jar. Use your fist, a wooden spoon, or a tamper to press down as hard as possible after each addition. Packing it tightly forces out trapped air pockets and forces the cabbage's natural juices to rise above the shreds. Leave about 1 to 1.5 inches of empty headspace at the top of the jar.
- Submerge and Weight It Down - The golden rule of fermentation is: keep everything under the brine to prevent mold. Take the reserved whole outer cabbage leaf from Step 2, trim it to fit the opening, and tear/tuck it flat over the top of the shredded cabbage. Place your fermentation weight (or a water-filled ziplock bag) on top of that leaf to completely submerge all components below the liquid line.
- Seal Loosely and Ferment - Wipe the rim clean and place a lid on the jar. Screw the lid on finger-tight only, or leave it backed off by a half-turn. This permits carbon dioxide gas built up during active fermentation to escape naturally without cracking the glass. Set the jar on a plate or tray (to catch any bubbling overflows) in a dark place at comfortable room temperature (65–72°F / 18–22°C).
- Monitor and Taste - Check the jar daily. If using a standard lid, untwist it once a day to "burp" out pressure, then screw it back on loosely. Ensure the cabbage stays submerged. Let it ferment for 7 to 14 days. Start tasting it around day 5; it is ready whenever it hits your preferred level of punchy, sour tang.
- Move to Cold Storage - Once it tastes perfect, remove the fermentation weight and the topmost protector leaf. Screw the clean lid on tight and transfer the jar to the refrigerator. Cold storage halts active fermentation, preserving the flavor and crunch for up to a full year.
