  1. In large, warm saucepan, put 1 tablespoon oil, the shole garlic clove, and washed spinach. Cover and cook 4 minutes, wilting the spinach leaves.
  2. Remove garlic and drain spinach. Heat over to 350 degrees.
  3. Reheat pot; add 1 1/2 tablespoons oil, chopped garlic, onion, basil, and zucchini. Cook until onion is soft. Mix in spinach.
  4. Oil baking dish. Spread spinach-zucchini mixture over bottom of dish. Pour egg over vegetables, tilting to evenly distribute the mixture. Sprinkle with crumbs.
  5. Bake 10-14 minutes or until egg is set.
