One Bowl Apple Cake

Ingredients
  • 2 Eggs
  • 1 3/4cups Sugar(can be reduced down to 1 cup if desired)
  • 2teaspoons Cinnamonheaping (can be increased to 3 teaspoons if desired)
  • 1/2cup Oil
  • 6medium ApplesGala or Fuji or Honey Crisp
  • 2cups Flour
  • 2teaspoons Baking Soda
Instructions
  1. Preheat oven to 350°.
  2. In a large bowl, mix the eggs, sugar, cinnamon and oil.
  3. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.)
  4. Mix together the baking soda and flour and add to the ingredients in the bowl.
  5. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients.
  6. Pour mixture into a greased one 9×13 or two 9″ round pans.
  7. Bake for approximately 55 minutes.
Recipe Notes

If you have the will power, let this cake sit a day before eating.  It will allow the cake to absorb the moisture from the apples and become super moist.
