In heavy skillet, melt butter and oil. Add crushed garlic. Moisten salmon in milk, then dredge through on cup of flour to which thyme, salt and pepper have been added.
As soon as garlic colors, saute salmon on both sides. (10 minutes)
Drain all but on ounce of oil from pan, thicken remaining oil with flour, then add lemon juice. Simmer a few minutes, then serve over salmon.
