  1. Make sure to squeeze the zucchini to get rid of extra moisture
  2. In a saucepan over medium heat, add oats, water and grated/squeezed zucchini and simmer until most of the liquid is absorbed, about 5 minutes.
  3. Take off heat and add egg whites, stirring constantly.
  4. Return to heat and continue stirring until nice and fluffy, 1 minute.
  5. Season with salt and a pinch of cinnamon. Add optional toppings.
