FRESH CUCUMBER SALSA
- 2 tablespoons Cilantro finely chopped fresh
- 2 tablespoons Onions finely chopped
- 1/4 teaspoon Red Pepper
- 1 tablespoon Honey
- 3 tablespoons Lime Juice
- 1/2 Cucumber peeled and diced small

FLORIDA-STYLE MARINADE
- Mix first 6 ingredients in flat soup dish, place 2 washed/dried salmon portions skin up to marinate for half hour while preparing rest of meal.
FRESH CUCUMBER SALSA
- Mix first 5 ingredients thoroughly in small bowl. Add cucumber and mix occasionally till served.
PREPARE:
- Heat olive oil in 8-inch skillet to coat. Add marinated salmon skin down and pour remaining marinade on top. Cover and cook over low/medium heat for 5 minutes or until salmon done to taste.
- Serve fish onto plates. Stir remaining sauce over heat until thickens slightly (water gone). Spoon 2 tablespoons of sauce over each portion.
- Layer cucumber salsa on top of fish portions to serve.
