Ingredients
- 1 cup Sugar
- 1 cup Brown Sugar
- 1 cup Shortening
- 2 Eggs
- 3/4 tsp Almond Extract
- 2 1/2 cups Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1 cup ½ chopped Maraschino Cherries or more (1 10 oz jar ≈ ¾ cups chopped)
- 1 1/2 cup Coconut flaked (≈20 oz)

Instructions
- Cream sugars, shortening and eggs.
- Add almond extract.
- Spoon flour, salt and soda to creamed mixture.
- Add cherries, coconut.
- Mix well.
- Drop by teaspoon on baking sheet.
- Bake @ 350° for 10-11 minutes. (16-17 minutes for larger cookies)
Recipe Notes
Buy an extra jar of cherries to chop and place on top to boost extra yummy factor!
