- 6 cups Apples pared, thinly sliced (1 1/2 lb apples)
- 1 cup Sugar
- 1 tsp Cinnamon (2 tsp for a lot of apples!)
- 1/8 tsp Salt
- 1 tsp Lemon Juice
- 1 Tbl Butter
- 1/2 cup Heavy Cream , optional

Instructions
- Mix Apples, Sugar, Cinnamon and Salt.
- Pour into “Pastry lined” pan. Dot top with Butter and Lemon Juice.
- Whip Heavy Cream until slightly thick and pour over Apples.
- Roll dough for top crust; perforate decoratively.
- For a glaze, brush top with slightly beaten Egg White, sprinkle with Sugar.
- Bake @ 425° for 40-50 minutes.
