Ingredients
- 2 1/2 tablespoons Oil
- 2 cloves Garlic 1 chopped
- 1 tablespoon Basil Leaves
- 3/4 teaspoon Vegetized or Real Salt
- 1/8 teaspoon Pepper
- 20 oz Spinach fresh
- 2 cups Zucchini diced
- 3/4 cup Onion chopped
- 6 Eggs
- 1/4 cup Bread Crumbs sprouted wheat

Instructions
- In large, warm saucepan, put 1 tablespoon oil, the shole garlic clove, and washed spinach. Cover and cook 4 minutes, wilting the spinach leaves.
- Remove garlic and drain spinach. Heat over to 350 degrees.
- Reheat pot; add 1 1/2 tablespoons oil, chopped garlic, onion, basil, and zucchini. Cook until onion is soft. Mix in spinach.
- Oil baking dish. Spread spinach-zucchini mixture over bottom of dish. Pour egg over vegetables, tilting to evenly distribute the mixture. Sprinkle with crumbs.
- Bake 10-14 minutes or until egg is set.
