Instructions
- In heavy skillet, melt butter and oil. Add crushed garlic. Moisten salmon in milk, then dredge through on cup of flour to which thyme, salt and pepper have been added.
- As soon as garlic colors, saute salmon on both sides. (10 minutes)
- Drain all but on ounce of oil from pan, thicken remaining oil with flour, then add lemon juice. Simmer a few minutes, then serve over salmon.
