- 1 box Yellow Cake Mix
- 1 box Instant Vanilla Pudding Mix
- 4 Eggs
- 3/4 cup Cooking Sherry
- 3/4 cup Canola Oil
- 1 Tablespoon Cinnamon
- 1 teaspoon Nutmeg
- 1 teaspoon Cardamom (if you don't have Cardamom, add additional 1/2 tsp each Cinnamon and Nutmeg)
- 1 Tablespoon Vanilla

- Preheat the oven to 350
- Dump all the ingredients into a bowl, mix well, then pour the mixture into a greased Bundt cake pan (you can use any size pan, or even a loaf or muffin tins-just keep in mind that the baking time will differ).
- Bake until a toothpick inserted in the center comes out clean, about 30 to 45 minutes.
- This cake needs no frills, but a simple powdered sugar glaze with lemon or orange zest will elevate it.
